Kickin Kale Salad

4 cups of Kale ( I use the triple washed bag of Kale, but it does have stems in it )
1 small red onion
2 ripe avocados
3 T of spicy brown mustard
1 Lemon juice squeezed
1/4 cup olive oil
1/2 cup Parmesan cheese or more if you like (if vegan, you can use nutritional yeast instead)
4 cloves of fresh garlic minced or more ( I like more)
crushed red pepper flakes to taste
In a big bowl, add kale, olive oil, and lemon juice. Massage the Olive Oil and Lemon juice into Kale. Then add garlic, avocado, Parmesan cheese, mustard, crushed red pepper, and salt/pepper. Finally mix in your tomatoes and red onions. Viola! So delish and it keeps in the fridge for a day.
