Bacon Cheeseburger Bake
2 tsp olive oil
1 lb extra lean ground beef (you could use ground turkey also)
1/2 onion diced
2 cloves garlic minced
1 Tbsp seasoning salt
Black pepper to taste
1 can diced tomatos
1/2 cup ketchup
1/4 cup mustard
6 oz whole wheat or gluten free spiral pasta
2-3 slices bacon – crumbled
8 oz shredded low fat cheddar cheese
10 hamburger dill chips finely diced – garnish
Pre-heat oven to 350° spray and 9×13 casserole dish with baking spray. Boil water for pasta. In microwave, cook bacon until is is crisp enough to crumble. I used thick cut bacon and it took approx 5 minutes.
In a skillet add olive oil and heat to med-high. Add onions and cook for 2-3 minutes until clear. Add garlic and stir together for a minute or so. Crumble beef and brown together with onions and garlic. When beef is browned, add seasoning salt, pepper, tomatos, ketchup, mustard and mix together. Simmer for a few minutes to thicken.
When pasta is tender, add to meat mixture and stir. Transfer to the 9×13 dish. Sprinkle crumbled bacon over the top, cover with shredded cheese. Bake approximately 15 minutes until cheese is melted.
Garnish with diced pickles.
Optional toppings – diced jalapenos, diced raw purple onion, diced fresh tomatos.
